2 pounds of petite gold potatoes, washed and halved
4 tablespoons of unsalted butter
4 cloves of garlic, minced
2 tablespoons of fresh rosemary, chopped (or 1 tablespoon dried)
1 tablespoon of fresh thyme, chopped (or 1 teaspoon dried)
1 teaspoon of sea salt (adjust to taste)
½ teaspoon of freshly ground black pepper
1 cup of chicken or vegetable broth
Fresh parsley, chopped (for serving)
Instructions
Start by preparing the potatoes. Rinse them under cold water to remove any dirt. Cut the petite gold potatoes in half to allow for even cooking.
In a medium bowl, mix the melted butter, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper to create a flavorful herb seasoning blend.
In the slow cooker, place the halved potatoes. Pour the herb mixture over the potatoes and gently toss them to ensure even coating.
Add 1 cup of chicken or vegetable broth into the slow cooker.
Cover the slow cooker with the lid and set it to low for about 6 hours or high for 3 hours. Cook until the potatoes are tender but not mushy.
Once cooked, carefully remove the lid and stir the potatoes gently. Allow them to sit for 10 minutes to absorb the remaining flavors.
Transfer the potatoes to a serving bowl, sprinkle with fresh parsley, and serve warm.
