1 cup breadcrumbs
1 small onion, finely chopped
2 cloves garlic, minced
2 large eggs
½ cup milk
2 tablespoons Worcestershire sauce
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dried oregano
½ teaspoon paprika
½ cup ketchup (for topping)
2 pounds baby potatoes, halved
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried rosemary
Salt and pepper to taste
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, eggs, milk, Worcestershire sauce, salt, black pepper, thyme, oregano, and paprika. Mix until just combined; avoid overmixing.
Transfer the meat mixture to a loaf pan or shape it into a free-form loaf on a baking sheet lined with parchment paper.
Spread the ketchup evenly over the top of the meatloaf.
In a separate bowl, toss the halved baby potatoes with olive oil, garlic powder, dried rosemary, salt, and pepper until evenly coated.
Scatter the seasoned potatoes around the meatloaf in the loaf pan or on the baking sheet.
Place the meatloaf and potatoes in the preheated oven. Bake for 1 hour or until the meatloaf reaches an internal temperature of 160°F (70°C) and the potatoes are golden brown and tender.
Once done, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
