4 large russet potatoes, peeled and diced into 1-inch cubes
1 medium onion, finely chopped
2 cloves garlic, minced
2 stalks celery, chopped
1 carrot, diced
4 cups chicken or vegetable broth
1 cup heavy cream or milk
1 tsp thyme (dried or fresh)
Salt and pepper to taste
1 cup shredded cheddar cheese
4 slices of cooked bacon, crumbled
1/2 cup sour cream
Chopped green onions or chives
Instructions
Start by peeling and dicing the russet potatoes into uniform cubes.
In a large pot over medium heat, add a tablespoon of olive oil. Once hot, add the chopped onion, celery, and carrot. Sauté for about 5 minutes, or until the onion becomes translucent. Add the minced garlic and sauté for an additional minute.
