1/4 cup granulated sugar
1/4 cup freshly squeezed lemon juice
Zest of 1 lemon
1 teaspoon vanilla extract
1 tablespoon lemon liqueur (optional)

Crushed biscuits or sponge cake (optional, for garnish)

Instructions
In a large mixing bowl, pour in the heavy whipping cream and start beating with an electric mixer on medium speed until it thickens and increases in volume.
Gradually add the granulated sugar while continuing to whip the cream until soft peaks form, about 2-3 minutes.
Once you have soft peaks, gently fold in the freshly squeezed lemon juice, lemon zest, vanilla extract, and lemon liqueur (if using).
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.
Prepare your serving glasses or bowls by layering crushed biscuits or sponge cake at the bottom if desired.
Once chilled, spoon the syllabub mixture into your prepared glasses or bowls. Top with additional lemon zest and a sprig of fresh mint.
