2 tablespoons unsalted butter
1 medium onion, finely chopped
2 cloves garlic, minced
1 medium potato, peeled and diced
4 cups vegetable or chicken broth
1 ½ cups freshly squeezed lemon juice (about 6-8 lemons)
Zest of 2 lemons
1 cup heavy cream or coconut cream
Salt and freshly ground black pepper, to taste
Fresh herbs (such as dill or parsley, chopped finely)
Croutons or lemon slices for serving
Instructions
In a large pot, melt the butter over medium heat. Add the chopped onion and sauté for about 5 minutes, until translucent. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
Add the diced potato to the pot, stirring to combine. Cook for another 3-4 minutes.
Pour in the vegetable or chicken broth, bringing the mixture to a boil. Reduce heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.
Once the potatoes are soft, remove the pot from heat. Stir in the freshly squeezed lemon juice and lemon zest.
Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches, blending until silky.
Stir in the heavy cream, adjusting the consistency to your preference. Heat gently over low heat, seasoning with salt and pepper to taste.
