1 cup rolled oats
1 cup all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder

1 cup buttermilk (or substitute with milk mixed with 1 tablespoon of vinegar)
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1/2 cup chopped nuts (such as walnuts or pecans)
1/2 cup shredded coconut
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan to prevent sticking.
In a large mixing bowl, combine the rolled oats and buttermilk. Let this mixture sit for about 20 minutes.
After the oats have soaked, add the vegetable oil, eggs, and vanilla extract to the bowl. Mix well until combined.
In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until evenly distributed.
Gradually fold the dry ingredients into the wet mixture until just combined.
If desired, fold in the chopped nuts and shredded coconut.
Pour the batter into the prepared baking pan, spreading it evenly.
