  1. In a small bowl, dissolve the yeast in warm milk and let it sit until frothy, about 5 minutes.
  2. In a large bowl, combine the flour, sugar, and salt. Stir in the yeast mixture, melted butter, and eggs. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.
  5. Once the dough has risen, punch it down and divide it into about 24 equal pieces. Roll each piece into a ball and place them on a parchment-lined baking sheet.
  6. Cover and let them rise again for about 30 minutes.
  7. Use your thumb to make an indentation in the center of each dough ball. Fill with your choice of sweet or savory fillings.
  8. Preheat your oven to 375°F (190°C). Bake the kolaches for 15-18 minutes or until they are golden brown.
  9. Allow them to cool slightly before serving. Dust sweet kolaches with powdered sugar if desired.
