1 ½ cups graham cracker crumbs
⅓ cup granulated sugar
½ cup unsalted butter, melted
1 can (14 ounces) sweetened condensed milk
½ cup fresh key lime juice (about 4-6 key limes)
1 teaspoon lime zest
2 large egg yolks
Whipped cream, for serving
Lime slices or zest, for garnish (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a medium-sized mixing bowl, combine graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the mixture resembles wet sand.
Transfer the crust mixture into a greased 9x9-inch baking pan. Firmly press the mixture into an even layer across the bottom of the pan. Bake for 8-10 minutes, or until lightly golden, then let cool slightly.
In a large mixing bowl, whisk together sweetened condensed milk, key lime juice, lime zest, and egg yolks until smooth.
Pour the key lime filling over the cooled crust, spreading it evenly with a spatula.
Return the baking pan to the oven and bake for an additional 15-18 minutes, or until the filling is set but still slightly jiggly in the center.
