Instructions
In a large mixing bowl, combine 1 cup of mascarpone cheese, 1 cup of heavy whipping cream, ½ cup of powdered sugar, and 1 teaspoon of vanilla extract. Using an electric mixer, beat on medium speed until soft peaks form, about 3-5 minutes.
While the cream is being whipped, wash and slice your chosen fruits. In a separate bowl, toss the fruits with 1 tablespoon of honey and 1 tablespoon of lemon juice.
In individual serving glasses or a large trifle dish, start by layering a generous spoonful of the mascarpone cream at the bottom. Follow this with a layer of the honeyed fruits. Repeat the layering process until the glasses are filled.
Cover the assembled dessert with plastic wrap and refrigerate for at least 1 hour.
Just before serving, garnish with fresh mint leaves for a pop of color and a hint of freshness. If desired, sprinkle some crushed biscotti or ladyfingers on top.
