4 slices of hearty bread (sourdough or ciabatta)
2 cups of mixed greens (arugula, spinach, or romaine)
1 cup of cooked and seasoned chicken or tofu
1 cup of roasted vegetables (bell peppers, zucchini, and eggplant)
½ cup of hummus or pesto
2 cups of fresh berries (strawberries, blueberries, raspberries)
1 cup of Greek yogurt or mascarpone cheese
2 tablespoons of honey or maple syrup
Instructions
Prepare the Ingredients: Preheat your oven to 375°F (190°C). Roast your chosen vegetables on a baking sheet drizzled with olive oil, salt, and pepper for about 20 minutes or until tender.
Toast the Bread: Lightly toast the bread slices until golden brown.
Assemble the Savory Stackers: Spread hummus or pesto on two slices of toasted bread. Layer with mixed greens, cooked chicken or tofu, and roasted vegetables. Top with another slice of bread.
Assemble the Sweet Stackers: On another slice of toasted bread, layer Greek yogurt or mascarpone cheese. Add fresh berries and drizzle with honey or maple syrup. Finish with another slice of bread.
