3 tablespoons of pure honey
1 tablespoon of freshly grated ginger (or 1 teaspoon of ground ginger)
2 tablespoons of extra virgin olive oil
½ teaspoon of sea salt (adjust to taste)
¼ teaspoon of freshly ground black pepper
Chopped fresh parsley or sesame seeds for garnish (optional)
Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the peeled and cut carrots with olive oil, salt, and pepper. Toss until evenly coated.
