Hamburger Steak with Onion Gravy is a classic dish that evokes feelings of home and warmth. Often regarded as comfort food, this savory delight combines seasoned ground beef patties with a rich, homemade onion gravy that perfectly complements the meat's texture.
Ingredients
Scale:
1 pound ground beef (80/20 blend for richness, ensuring juiciness and flavor)
1/2 cup breadcrumbs (preferably Italian-seasoned for extra flavor)
1/4 cup milk (whole milk is ideal, but any milk will work)
1 large egg (binding agent that helps the patties hold together)
1 teaspoon Worcestershire sauce (adds depth and umami)
1 teaspoon garlic powder (for an aromatic boost)
1 teaspoon onion powder (to enhance the onion flavor)
Salt and pepper, to taste (season generously for flavor)
2 tablespoons olive oil or butter (both impart different nuances of flavor)
1 large onion, thinly sliced (preferably yellow or sweet onions for best sweetness)
2 cups beef broth (homemade or store-bought, low-sodium recommended)
1 tablespoon soy sauce (optional, adds richness and color)
1 tablespoon cornstarch mixed with 2 tablespoons cold water (for thickening the gravy)
Salt and pepper, to taste (adjust after tasting the gravy for seasoning)
Instructions
In a large bowl, combine the ground beef, breadcrumbs, milk, egg, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix gently until just combined; avoid overmixing to keep the patties tender.
Divide the mixture into four equal portions, being careful to keep each portion similar in size for even cooking. Shape them into oval or round patties, about 1/2 inch thick.
Heat a large skillet over medium heat and add a tablespoon of olive oil or butter. Once hot, add the patties. Cook for about 4-5 minutes on one side until browned, then flip and cook for another 4-5 minutes until cooked through.
Transfer the cooked patties to a plate and cover to keep warm while preparing the gravy.
In the same skillet, add another tablespoon of olive oil or butter. Add the sliced onions and cook over medium heat, stirring occasionally, until they are caramelized and golden brown, about 10-12 minutes.
Once the onions are caramelized, sprinkle a bit of salt and pepper over them. Pour in the beef broth and soy sauce, scraping the bottom of the skillet to deglaze.
Stir in the cornstarch mixture, allowing the gravy to thicken while stirring continuously for about 2-3 minutes.
Return the patties to the skillet, spooning the gravy over them. Simmer for an additional 2-3 minutes to heat through and let the flavors meld together.
