4 cups of diced potatoes (about 4 medium-sized potatoes), preferably Yukon Gold or red potatoes
2 cups of diced cooked ham
1 medium onion, chopped
2 cups of shredded cheddar cheese
1 cup of sour cream
1 cup of milk
2 tablespoons of all-purpose flour
1 tablespoon of butter
Salt and pepper to taste
1 cup of crushed cornflakes (optional)
2 tablespoons of melted butter (if using cornflakes)
Instructions
Preheat your oven to 350°F (175°C).
In a medium saucepan, melt 1 tablespoon of butter over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened and translucent.
Sprinkle the flour over the sautéed onions, stirring constantly for about 1 minute. Gradually whisk in the milk and sour cream, stirring until the mixture is smooth and well combined. Season with salt and pepper to taste. Cook for another 2-3 minutes, until the sauce thickens slightly.
In a large mixing bowl, combine the diced potatoes, cooked ham, and half of the shredded cheese. Pour the sauce over the potato and ham mixture, mixing thoroughly.
Grease a 9x13-inch baking dish with non-stick spray or butter. Pour the mixture into the prepared dish, spreading it evenly.
Top the casserole with the remaining shredded cheese. If using, mix the crushed cornflakes with the melted butter and sprinkle over the cheese layer.
Place the casserole in the preheated oven. Bake for about 45-50 minutes or until the top is golden brown and the casserole is bubbling.
Once baked, remove the casserole from the oven and let it cool for about 5-10 minutes.
