1.5 pounds beef sirloin, cut into bite-sized pieces
1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)
Salt and pepper to taste
1.5 pounds baby potatoes, halved
3 tablespoons olive oil
1 teaspoon garlic powder
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the halved baby potatoes with olive oil, garlic powder, salt, and pepper. Toss until the potatoes are evenly coated.
Spread the seasoned potatoes on a baking sheet in a single layer. Place them in the preheated oven and roast for about 25-30 minutes, or until golden brown and fork-tender. Stir halfway through cooking.
While the potatoes are roasting, heat a large skillet over medium-high heat. Add 2 tablespoons of butter and once melted, add the beef pieces in a single layer. Season with salt and pepper. Cook for about 3-4 minutes, stirring occasionally, until browned.
