1 cup finely diced bell peppers (any color)
1 cup grated carrots
1 cup finely diced tomatoes
1 cup cream cheese (softened)
1/2 cup sour cream or Greek yogurt
1 tablespoon fresh lemon juice
1/4 cup fresh herbs (dill, parsley, or chives, finely chopped)
1 teaspoon garlic powder
Salt and pepper to taste
Instructions
In a large mixing bowl, combine the softened cream cheese, sour cream (or Greek yogurt), and lemon juice. Use a hand mixer or a spatula to blend until smooth and creamy.
Add the diced cucumber, bell peppers, grated carrots, and diced tomatoes to the bowl. Gently fold the vegetables into the creamy mixture until well combined.
