4 medium-sized russet potatoes, peeled and diced into uniform cubes
1 large onion, sliced
1 pound smoked Polish sausage, sliced into rounds
3 tablespoons vegetable oil or olive oil
2 cloves garlic, minced
Salt and pepper to taste
Fresh parsley, chopped for garnish
Instructions
Prepare the ingredients. Peel and dice the russet potatoes into small cubes.
In a large skillet, heat 2 tablespoons of oil over medium heat. Add the diced potatoes and season with salt and pepper. Stir occasionally.
Cook the potatoes for about 10-15 minutes until golden brown and tender.
Remove the potatoes from the skillet. In the same skillet, add the remaining tablespoon of oil and sliced onions. Sauté for about 5 minutes until translucent.
Add the sliced smoked Polish sausage to the skillet with the onions. Cook for an additional 5-7 minutes until heated through.
Return the cooked potatoes to the skillet. Add the minced garlic and stir to combine. Cook together for another 3-5 minutes.
