Fried Potatoes and Onions

  1. In a large bowl, combine the sliced potatoes and onions.
  2. In a separate bowl, mix together the flour, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using).
  3. Pour the buttermilk over the potatoes and onions, and toss to coat.
  4. Sprinkle the flour mixture over the potatoes and onions, and toss to coat evenly.
  5. Heat about 1/2-inch of vegetable oil in a large skillet over medium-high heat until it reaches 350°F.
  6. Carefully add the coated potatoes and onions to the hot oil in batches, being careful not to overcrowd the skillet.
  7. Fry the potatoes and onions for 3-4 minutes on each side, or until they're golden brown and crispy.
  8. Remove the fried potatoes and onions from the oil with a slotted spoon, and drain on paper towels.
  9. Repeat the frying process with the remaining potatoes and onions.
  10. Serve the fried potatoes and onions hot, garnished with chopped fresh herbs like parsley or chives (if desired).
