Description
A classic comfort food combination of crispy, golden-brown potatoes and sweet, caramelized onions.
Ingredients

- 2-3 large potatoes, peeled and cut into 1/2-inch thick slices
- 1 large onion, sliced into 1/2-inch thick rings
- 1/2 cup all-purpose flour
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1 cup buttermilk
- Vegetable oil for frying
Instructions
- In a large bowl, combine the sliced potatoes and onions.
- In a separate bowl, mix together the flour, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using).
- Pour the buttermilk over the potatoes and onions, and toss to coat.
- Sprinkle the flour mixture over the potatoes and onions, and toss to coat evenly.
- Heat about 1/2-inch of vegetable oil in a large skillet over medium-high heat until it reaches 350°F.
- Carefully add the coated potatoes and onions to the hot oil in batches, being careful not to overcrowd the skillet.
- Fry the potatoes and onions for 3-4 minutes on each side, or until they're golden brown and crispy.
- Remove the fried potatoes and onions from the oil with a slotted spoon, and drain on paper towels.
- Repeat the frying process with the remaining potatoes and onions.
- Serve the fried potatoes and onions hot, garnished with chopped fresh herbs like parsley or chives (if desired).
