4 medium-sized potatoes (Russet or Yukon Gold)
1 large yellow onion, thinly sliced
2 cloves garlic, minced (optional)
3 tablespoons butter
2 tablespoons olive oil
1 teaspoon salt (to taste)
½ teaspoon freshly cracked pepper (to taste)
Fresh or dried rosemary or thyme (optional)
Instructions
Peel the potatoes and slice them into thin, even pieces, about ¼ inch thick. Rinse the slices in cold water to remove excess starch.
Pat the potato slices dry with a clean kitchen towel or paper towels.
In a large skillet, add the butter and olive oil over medium heat. Allow the butter to melt completely.
Once the butter is melted and begins to foam, add the sliced onions. Sauté for about 5-7 minutes until soft and translucent.
Stir in the dried potato slices, spreading them out in a single layer for even cooking.
Sprinkle salt, pepper, and optional garlic over the potatoes. Stir gently to combine.
Let the potatoes cook without stirring for about 10-15 minutes until the edges are crispy and golden brown. Flip them over and cook the other side for another 10-15 minutes.
