Easy Beef Taco Casserole is a delightful dish that brings together the best flavors of Mexican cuisine in a simple, family-friendly way.
Ingredients
Scale:
1 pound ground beef
1 can (15 oz) black beans, drained and rinsed
1 can (10 oz) diced tomatoes with green chilies
1 packet (1 oz) taco seasoning
2 cups tortilla chips, crushed
2 cups shredded cheddar cheese
1 cup corn (fresh, frozen, or canned)
1/2 cup water
1/2 cup sour cream
1/4 cup chopped green onions or cilantro
1 jalapeño, sliced (optional)
Instructions
Preheat the oven: Set your oven to 350°F (175°C) to get it ready for baking.
Cook the beef: In a large skillet over medium heat, brown the ground beef, breaking it apart with a spatula until it's no longer pink, about 5-7 minutes. Drain excess grease.
Add ingredients: Stir in the taco seasoning, diced tomatoes with green chilies, black beans, corn, and water. Mix well and let it simmer for about 5 minutes.
Layer the casserole: In a greased 9x13 inch baking dish, spread half of the crushed tortilla chips on the bottom. Pour half of the beef mixture over the chips, then sprinkle with 1 cup of shredded cheese. Repeat the layers, finishing with the remaining cheese on top.
