1/2 pound breakfast sausage
1/4 cup all-purpose flour
2 cups whole milk
Salt to taste
Black pepper to taste
Optional: a pinch of cayenne pepper
Freshly baked biscuits for serving
Instructions
In a large skillet, crumble the breakfast sausage over medium heat. Cook until browned and fully cooked, about 5-7 minutes.
Leave about 2 tablespoons of grease in the skillet and drain the excess if necessary. Add the flour to the skillet, stirring it into the grease to create a roux. Cook for 1-2 minutes, stirring constantly, until the mixture is golden brown.
Gradually pour in the milk while continuously stirring to prevent lumps. Increase the heat slightly and bring the mixture to a simmer. The gravy will begin to thicken within 5 minutes.
