A delicious and easy meal recipe perfect for weeknight dinners or special occasions.
Ingredients

1 pound of boneless, skinless chicken breast or thighs
2 tablespoons of olive oil
1 onion, diced
2 cloves of garlic, minced
1 cup of mixed vegetables (such as bell peppers, carrots, and broccoli)
1 cup of cooked rice or noodles
1 tablespoon of soy sauce
1 teaspoon of dried thyme
Salt and pepper to taste
Optional: other spices and herbs of your choice
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and cook until translucent, about 3-4 minutes.
Add the minced garlic and cook for an additional minute, until fragrant.
Add the mixed vegetables and cook until they're tender-crisp, about 5 minutes.
In a separate bowl, whisk together the soy sauce, thyme, salt, and pepper.
Add the cooked chicken to the skillet and pour in the soy sauce mixture. Stir to combine and cook for an additional 2-3 minutes, until the chicken is fully coated.
Serve the chicken and vegetable mixture over cooked rice or noodles, garnished with fresh herbs and a sprinkle of salt and pepper to taste.
