1 cup all-purpose flour
1 cup self-rising flour
1 cup granulated sugar
1 tsp baking powder
1/2 tsp salt
1 cup milk (or any plant-based milk for an eggless cuppa cake)
1/2 cup vegetable oil or melted butter
2 large eggs (or 1/2 cup unsweetened applesauce for an eggless version)
1 tsp vanilla extract
Optional: 1 cup brewed coffee (for a coffee-flavored cake)
Powdered sugar for dusting
Chocolate icing or ganache for topping
Chopped nuts or fresh fruit for garnish
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
In a large mixing bowl, combine all-purpose flour, self-rising flour, granulated sugar, baking powder, and salt. Whisk until well blended.
In another bowl, mix milk, vegetable oil (or melted butter), eggs (or applesauce), and vanilla extract until smooth. If making a coffee-flavored cake, whisk in brewed coffee at this stage.
Gradually pour wet ingredients into dry ingredients, stirring gently to combine. Do not overmix; a few lumps are fine.
Pour the batter into the prepared cake pan and smooth the top with a spatula. Tap the pan gently to release air bubbles.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Once cool, dust with powdered sugar or top with your favorite icing before serving.
