  2. In a large mixing bowl, combine all-purpose flour, self-rising flour, granulated sugar, baking powder, and salt. Whisk until well blended.
  3. In another bowl, mix milk, vegetable oil (or melted butter), eggs (or applesauce), and vanilla extract until smooth. If making a coffee-flavored cake, whisk in brewed coffee at this stage.
  4. Gradually pour wet ingredients into dry ingredients, stirring gently to combine. Do not overmix; a few lumps are fine.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula. Tap the pan gently to release air bubbles.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
