Ingredients

- 2 large cucumbers, peeled and sliced
- 1 medium red onion, thinly sliced
- 3 ripe tomatoes, diced
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon dried oregano
- 1/4 cup crumbled feta cheese (optional)
- Handful of fresh basil leaves, torn
Instructions
- Rinse all the vegetables thoroughly under cold water.
- Peel the cucumbers and slice them into thin rounds.
- Thinly slice the red onion.
- Dice the tomatoes into bite-sized pieces.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, pepper, and oregano until well-emulsified.
- In a large bowl, combine sliced cucumbers, onions, and diced tomatoes.
- Pour the dressing over the salad and gently toss to ensure even coverage.
- Cover the bowl and refrigerate for at least 30 minutes before serving. Garnish with crumbled feta cheese and fresh basil if desired.
