Crock Pot Chicken and Dumplings is a classic dish that warms both the heart and soul. This dish combines tender chicken, fluffy dumplings, and a rich, savory broth, making it the perfect comfort food for chilly nights or family gatherings.
Ingredients
Scale:
2 lbs boneless, skinless chicken breasts
1 medium onion, chopped
2 cups carrots, sliced
2 cups celery, sliced
3 cloves garlic, minced
4 cups chicken broth (preferably low-sodium)
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
1 cup frozen peas (optional)
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
4 tablespoons unsalted butter, melted
Instructions
Start by placing the chicken breasts at the bottom of the crock pot. Make sure they are spread out evenly for consistent cooking.
Add the chopped onion, sliced carrots, sliced celery, and minced garlic over the chicken.
Pour in the chicken broth, ensuring the chicken is fully submerged.
Add the dried thyme, dried rosemary, salt, and pepper. Stir gently to combine.
Cover the crock pot and cook on low for 6-8 hours or high for 4-6 hours, until the chicken is tender and fully cooked.
Once the cooking time is up, remove the chicken and shred it using two forks. Return the shredded chicken back to the crock pot.
In a separate bowl, prepare the dumpling mixture by combining the flour, baking powder, and salt.
Add the milk and melted butter to the dry ingredients, stirring until just combined.
Spoon the dumpling batter over the chicken and vegetable mixture in the crock pot, creating small mounds.
Cover and cook on high for an additional 30-40 minutes, until the dumplings are fluffy and cooked through.
If desired, add the frozen peas during the last 10 minutes of cooking.
