A delightful combo of crispy hashbrowns and savory sausage, perfect for breakfast, brunch, or a hearty snack. These bites are gluten-free and easy to make in an air fryer.

3 cups frozen hashbrowns, thawed and squeezed dry
1/2 cup grated cheddar cheese (optional)
1/4 cup finely chopped onions
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
1 tablespoon olive oil or cooking spray
1 pound breakfast sausage
1/2 teaspoon dried thyme (optional)
1/2 teaspoon black pepper
Instructions
In a skillet over medium heat, cook the breakfast sausage until it’s browned and fully cooked, about 6-8 minutes. Break it apart with a spatula as it cooks. Drain any excess fat and set aside to cool slightly.
In a large bowl, combine the thawed hashbrowns, grated cheese, chopped onions, garlic powder, paprika, salt, and pepper. Mix well until all ingredients are evenly distributed.
Preheat your air fryer to 400°F (200°C). Take a small handful of the hashbrown mixture and flatten it in the palm of your hand. Place about a tablespoon of the cooked sausage in the center, then fold the hashbrowns around the sausage to form a ball.
Lightly spray the air fryer basket with cooking spray. Place the hashbrown sausage bites in a single layer, leaving space between each. Air fry for 12-15 minutes, flipping halfway through, until they are golden brown and crispy.
Once crispy, remove the bites from the air fryer and let them cool for a couple of minutes. Serve warm with your choice of dipping sauces.
