Creamed peas on toast is a classic British comfort food that combines the simplicity of toasted bread with the luxurious texture of creamy peas. It's a satisfying and quick lunch idea, perfect as a savory breakfast option or a delicious, easy vegetarian meal.
Ingredients
Scale:
2 cups of fresh or frozen garden peas
2 tablespoons of unsalted butter
2 tablespoons of all-purpose flour
1 and 1/2 cups of whole milk
1/2 teaspoon of salt
1/4 teaspoon of freshly ground black pepper
Pinch of nutmeg (optional)
4 slices of rustic bread or your choice of whole grain bread
1 tablespoon of butter, for toasting
Chopped fresh mint or parsley
Grated Parmesan cheese (optional)
Instructions
Start by preparing the bread. Heat a skillet over medium heat and melt the butter. Place the slices of bread in the skillet, toasting each side until golden brown and crispy. Once done, set aside on a plate.
In a medium saucepan, melt the unsalted butter over medium heat. Stir in the all-purpose flour and cook for about 1-2 minutes, until the mixture turns a light golden color, forming a roux.
Gradually whisk in the whole milk, ensuring there are no lumps, and cook for about 5 minutes until the mixture begins to thicken.
Add in the garden peas, salt, black pepper, and nutmeg. Stir well and cook until the peas are tender and the sauce achieves a creamy consistency, about 5-7 minutes.
Once the creamed peas are ready, evenly spoon the mixture over the toasted bread slices.
Top with freshly chopped mint or parsley and a sprinkle of grated Parmesan cheese, if using.
