2 pounds ground beef (80/20)
1 cup breadcrumbs
1/2 cup onion, finely chopped
1/2 cup bell pepper, finely chopped
2 cloves garlic, minced
2 large eggs
1/4 cup milk
1 tablespoon Worcestershire sauce
1 tablespoon barbecue sauce (optional)
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
1/2 teaspoon smoked paprika
4 large russet potatoes, peeled and sliced
1 cup sour cream
1 cup shredded cheddar cheese
1/2 cup milk
1/2 cup green onions, chopped
1/2 teaspoon garlic powder
Salt and pepper to taste
1 cup shredded cheddar cheese (for topping)
1/2 cup crispy bacon bits (optional)
Chopped fresh parsley for garnish
Instructions
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, bell pepper, minced garlic, eggs, milk, Worcestershire sauce, barbecue sauce (if using), salt, pepper, Italian seasoning, and smoked paprika. Mix until just combined.
Transfer the meat mixture to a greased 9x13 inch baking dish. Shape it into a loaf in the center, leaving space around the edges for the potato casserole.
In another bowl, mix the sliced potatoes, sour cream, shredded cheddar cheese, milk, chopped green onions, garlic powder, salt, and pepper. Stir until the potatoes are well coated.
Spoon the potato mixture around the meatloaf in the baking dish, ensuring even distribution.
Place the casserole in the preheated oven and bake for about 1 hour, or until the meatloaf is cooked through.
