1 pound ground beef
1 medium onion, diced
2 cloves garlic, minced
1 (15-ounce) can of corn, drained
1 (10.5-ounce) can of cream of mushroom soup
1 cup shredded cheddar cheese
2 cups diced potatoes
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
1 cup cornbread mix
1/3 cup milk
1 egg
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, brown the ground beef, breaking it apart with a spatula. Cook until it is no longer pink, about 5-7 minutes. Drain any excess fat.
Add the diced onion and minced garlic to the skillet. Sauté for an additional 3-4 minutes, or until the onion is translucent and fragrant.
Stir in the drained corn, cream of mushroom soup, shredded cheddar cheese, diced potatoes, chili powder, cumin, salt, and pepper. Mix everything thoroughly and remove from heat.
In a separate bowl, mix the cornbread mix with milk and egg until just combined.
