  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, and salt until well combined.
  4. Create a well in the center of the dry ingredients and add the oil, crushed pineapple, mandarin oranges, eggs, and vanilla extract. Mix until just combined.
  5. If using, gently fold in the shredded coconut.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
