3 cups cooked potatoes, diced (or 1 can of diced potatoes, drained)
1 can cream of mushroom soup (or cream of chicken soup)
1 cup sour cream
1 teaspoon garlic powder
1 teaspoon salt, adjust to taste
1/2 teaspoon black pepper
1 cup shredded cheddar cheese
1 cup crushed potato chips or French fried onions
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, brown the ground beef along with the diced onion until the meat is no longer pink, about 5-7 minutes. Drain any excess fat.
Stir in the frozen mixed vegetables and cook for an additional 3-4 minutes until tender.
In a large bowl, combine the cooked beef and vegetable mixture with the diced potatoes, cream of mushroom soup, sour cream, garlic powder, salt, and pepper. Mix well.
Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.
Sprinkle the shredded cheddar cheese and crushed potato chips or French fried onions on top.
Bake for 30-35 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.
Remove from the oven and let it cool for a few minutes before serving.
