1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
¼ cup granulated sugar
1 teaspoon vanilla extract
16 oz cream cheese, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
Instructions
Preheat your oven to 325°F (160°C).
In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and vanilla extract. Stir until the mixture resembles wet sand.
Press the crust mixture firmly into the bottom of a 9x9-inch baking pan. Bake the crust for 8-10 minutes or until lightly golden.
In a large bowl, beat the softened cream cheese with an electric mixer until creamy and smooth. Gradually add the sugar, mixing well after each addition.
Beat in the eggs, one at a time, mixing until just combined. Add the vanilla extract and mix until smooth.
Gently fold in the semi-sweet chocolate chips into the cheesecake mixture until evenly distributed.
