These delightful treats feature a buttery pastry crust enveloping a warm, spiced apple filling that embodies the essence of autumn.

2 ½ cups all-purpose flour
1 teaspoon salt
1 tablespoon granulated sugar
1 cup (2 sticks) unsalted butter, chilled and cubed
6 to 8 tablespoons ice water
4 cups fresh apples, peeled, cored, and sliced (Granny Smith or Honeycrisp work well)
¾ cup brown sugar, packed
1 teaspoon cinnamon
½ teaspoon nutmeg
1 tablespoon lemon juice
1 tablespoon cornstarch
1 egg, beaten (for egg wash)
Granulated sugar for sprinkling
Instructions
In a large bowl, combine the flour, salt, and sugar. Add the chilled, cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
In another large bowl, combine the sliced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until the apples are well coated.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
On a lightly floured surface, roll out one disk of dough into a rectangle, about ¼ inch thick. Transfer the dough to the prepared baking sheet.
Spoon the apple filling evenly over the rolled-out dough, leaving about an inch border around the edges.
Roll out the second disk of dough and place it over the apple filling. Seal the edges and cut slits in the top crust to allow steam to escape.
Brush the top crust with the beaten egg and sprinkle with granulated sugar. Bake for 30-35 minutes, or until the crust is golden brown.
Allow the apple slices to cool for at least 15 minutes before cutting into squares or rectangles.
