Cheesy Potato Skins

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the russet potatoes under cold water to remove any dirt. Pat them dry with a towel.
  3. Prick each potato several times with a fork to allow steam to escape. Rub them with olive oil and sprinkle salt and pepper generously. Place them directly on the oven rack and bake for about 45-60 minutes, or until tender when pierced with a fork.
  4. Once baked, remove the potatoes from the oven and let them cool for about 10 minutes. Cut each potato in half lengthwise, and carefully scoop out some of the flesh, leaving about ¼ inch of potato on the skin.
  5. Brush the insides of the potato skins with olive oil, then season with salt and pepper.
  6. Sprinkle each potato skin with shredded cheddar cheese and crumbled bacon. You can also add some of the scooped potato flesh back into the skins.
  7. Place the filled potato skins back on a baking sheet and return them to the oven. Bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  8. Remove the potato skins from the oven. Top each with a dollop of sour cream and a sprinkle of chopped chives. Optionally add diced tomatoes or smoked paprika.
