Ingredients
Scale:
1 pound ground beef
1/2 cup breadcrumbs, preferably seasoned for extra flavor
1/4 cup grated Parmesan cheese, freshly grated for the best texture
2 cloves garlic, minced, or 1/2 teaspoon garlic powder if preferred
1 teaspoon dried oregano, or Italian seasoning for a more complex flavor
1/2 teaspoon salt, adjust to taste
1/4 teaspoon black pepper, freshly cracked is best
1 large egg, at room temperature
2 cups all-purpose flour, spooned and leveled for accuracy
1 tablespoon baking powder, ensure it's fresh for the best rise
1/2 teaspoon salt, to enhance the overall flavor
1/4 cup unsalted butter, cold and cubed—a key to flaky biscuits
3/4 cup milk, whole milk is recommended for richness
1 cup shredded mozzarella cheese, use fresh if possible for a meltier texture
2 tablespoons melted butter (for brushing), add a touch of garlic powder for an extra layer of flavor
1 teaspoon Italian seasoning (for topping), optional but adds herbaceous notes
Instructions
In a large bowl, combine ground beef, breadcrumbs, grated Parmesan, minced garlic, oregano, salt, pepper, and egg. Mix until well combined.
Shape the mixture into small meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
Preheat your oven to 375°F (190°C).
Bake the meatballs in the preheated oven for 15-20 minutes, or until they are cooked through and lightly browned. Remove from the oven and set aside to cool slightly.
In a large mixing bowl, combine flour, baking powder, and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
Gradually stir in the milk until a dough forms, being careful not to overmix.
On a lightly floured surface, roll out the biscuit dough to about 1/2 inch thick. Cut into squares, roughly 4x4 inches.
Place a meatball in the center of each square, top with shredded mozzarella cheese, then fold the corners of the dough over to seal the meatball inside.
Place the biscuit bombs seam-side down on a greased baking sheet. Brush the tops with melted butter and sprinkle with Italian seasoning.
Bake in the oven for 20-25 minutes, or until the biscuit bombs are golden brown and p■ up. Remove from the oven and let cool slightly before serving.
