2 cups cooked chicken, shredded
1 cup cheddar cheese, shredded
4 large tortillas (flour or corn)
1 tablespoon olive oil or butter
1 teaspoon taco seasoning (optional)
Salt and pepper, to taste
Cilantro lime chicken, diced, for garnish
Creamy salsa dip or homemade quesadilla sauce
Shredded lettuce and diced tomatoes

Instructions
Prepare the chicken: Cook your chicken (grill, bake, or poach), shred it, and season with taco seasoning, salt, and pepper.
Assemble the quesadillas: Lay one tortilla flat, add ½ cup of shredded chicken and ¼ cup of cheddar cheese on half, then fold the tortilla.
