2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
3 cups cooked pasta (penne or fusilli recommended)
1 cup chicken broth
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup sour cream
1 can (10.5 oz) cream of chicken soup
1 cup broccoli florets
1 red bell pepper, diced
1 medium onion, finely chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 tablespoon olive oil
1/4 cup grated Parmesan cheese for topping
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, add olive oil. Once heated, sauté the onions and garlic until they are translucent, about 3-4 minutes.
Add the chicken pieces to the skillet. Cook until they are browned on the outside, about 6-8 minutes.
In a large mixing bowl, combine the cream of chicken soup, sour cream, and chicken broth. Stir until smooth.
Add cooked pasta, sautéed chicken, broccoli, red bell pepper, cheese blends, salt, black pepper, and thyme to the mixing bowl. Mix until all ingredients are well distributed.
Transfer the mixture into a greased 9 x 13-inch baking dish. Use a spatula to spread the mixture evenly.
Sprinkle the Parmesan cheese evenly over the top.
Bake the casserole in the preheated oven for 30-35 minutes, or until the top is golden brown and bubbly.
