6 strips of bacon, cooked and crumbled
1 cup of chopped bell peppers
1 cup of chopped onions

Spread sautéed vegetables evenly in the prepared baking dish. Sprinkle crumbled bacon over the vegetables. Pour egg mixture over the top.
Sprinkle shredded cheddar and mozzarella cheeses over the egg mixture. Press down slightly with a spatula.
Bake for 35-40 minutes, or until the top is golden brown and the eggs are set.
Allow the casserole to cool for a few minutes before serving. Garnish with dried parsley if desired.
