1 pound ground beef
1 cup uncooked white rice
1 can (10.5 oz) condensed cream of mushroom soup
1 can (10.5 oz) beef broth
1 cup shredded cheddar cheese
1 cup frozen mixed vegetables (peas, carrots, corn)
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1 cup shredded mozzarella cheese
1/2 cup crushed tortilla chips (optional for extra crunch)
Instructions
Preheat the oven to 350°F (175°C).
In a large skillet over medium heat, brown the ground beef until it’s no longer pink, about 5-7 minutes. Drain excess fat if necessary.
Stir in the cream of mushroom soup, beef broth, uncooked rice, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper. Mix well.
Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly.
Sprinkle the shredded cheddar cheese evenly over the top.
Cover with aluminum foil and bake for about 25 minutes.
Remove the foil and add the mozzarella cheese on top. If using crushed tortilla chips, sprinkle them over the mozzarella.
Return to the oven and bake uncovered for an additional 10-15 minutes, until the cheese is bubbly and golden brown.
Let the casserole sit for about 5 minutes before serving.
