Ingredients
Scale:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder (optional)
1 cup buttermilk (or milk with 1 tablespoon lemon juice added)
1/2 cup vegetable oil or melted butter
2 large eggs
1 1/2 cups shredded sharp cheddar cheese
1/4 cup chopped fresh herbs (e.g., chives or parsley, optional)
Instructions
Preheat your oven to 375°F (190°C).
Grease a standard muffin pan or line it with muffin liners.
In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and garlic powder (if using) until well combined.
In another bowl, beat together the buttermilk, oil, and eggs until you achieve a smooth mixture.
Pour the wet ingredients into the dry ingredients, stirring gently until just combined.
Fold in the shredded cheddar cheese and chopped herbs until evenly distributed.
Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
Place the muffin pan in the preheated oven and bake for 18-22 minutes, or until the muffins are golden brown.
Remove the muffins from the oven and let them cool in the pan for about 5 minutes before transferring to a wire rack.
