Cabbage with Bacon is a delightful, hearty dish that combines crispy bacon with the subtle sweetness of sautéed cabbage. It's an easy and nutritious low-carb option that serves as a flavorful side dish or main course.
Ingredients
Scale:
1 large head of cabbage, cored and thinly sliced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 cup chicken broth (vegetable broth for a vegetarian option)
8 ounces thick-cut bacon, diced
1 tablespoon olive oil
2 cloves garlic, minced
1 onion, finely chopped
Instructions
Begin by washing the cabbage thoroughly and patting it dry. Core the cabbage and slice it into thin strips, approximately 1/4-inch thick. Dice the bacon into small pieces, and mince the garlic cloves. Chop the onion finely.
In a large skillet over medium heat, add the olive oil and diced bacon. Cook until the bacon becomes crispy and golden brown, approximately 7-10 minutes. Use a slotted spoon to remove the bacon from the skillet and set it aside, leaving the rendered bacon fat in the skillet.
Add the chopped onion to the skillet with the bacon fat. Sauté until it becomes translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
Increase the heat to medium-high and add the sliced cabbage to the skillet. Toss the cabbage in the bacon fat and aromatics, allowing it to soften for about 10 minutes. Stir occasionally to ensure even cooking.
Sprinkle the salt, black pepper, and paprika over the cabbage. Pour in the chicken broth to deglaze the pan, scraping any browned bits from the bottom. Reduce the heat to low, cover the skillet, and let the cabbage steam for another 10 minutes, or until tender.
Once the cabbage is tender, return the crispy bacon to the skillet. Stir to combine all ingredients thoroughly. Taste and adjust seasoning if necessary. Serve warm, garnished with additional paprika or fresh herbs if desired.
