Ingredients
Scale:
1 medium head of green cabbage, chopped (about 4 cups)
2 large carrots, diced
1 large onion, chopped
3 cloves garlic, minced
2 stalks celery, diced
1 bell pepper, chopped (any color)
1 can (14.5 oz) diced tomatoes, with juice
1 cup green beans, trimmed and cut into pieces (fresh or frozen)
4 cups vegetable broth (low-sodium preferred)
1 tablespoon olive oil
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and pepper to taste
1 teaspoon smoked paprika (optional for a smoky flavor)
Fresh parsley, chopped (optional topping)
A dollop of sour cream or vegan alternative (optional topping)
Croutons or toasted bread for serving (optional topping)
Instructions
Start by washing and chopping all your vegetables. Aim for uniform sizes to ensure even cooking.
Set your Instant Pot to the 'Sauté' function. Once hot, add the olive oil and let it heat for about 30 seconds.
Add the chopped onion and garlic to the pot, sautéing for 2-3 minutes until the onions are translucent and fragrant.
Stir in the diced carrots, celery, and bell pepper, cooking for an additional 3-4 minutes until they start to soften.
Next, add the chopped cabbage to the pot, along with the diced tomatoes (with their juice), green beans, vegetable broth, thyme, oregano, and smoked paprika. Stir everything.
