2 cups milk (whole milk recommended for creaminess)
1 cup heavy whipping cream
¼ cup powdered sugar
1 teaspoon vanilla extract
Additional whipped cream for garnish
Chocolate shavings or butterscotch chips (optional)
Instructions
In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and crumbly.
Press the crumb mixture firmly into the bottom of a 9x13 inch baking dish to establish an even layer. Chill in the refrigerator while preparing the filling.
In another bowl, whisk together the instant butterscotch pudding mix and milk until smooth and thickened.
In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Pour the butterscotch pudding over the chilled graham cracker crust. Fold half of the whipped cream into the pudding and spread over the pudding layer.
Spread the remaining whipped cream over the pudding layer. Garnish with chocolate shavings or butterscotch chips if desired.
Cover the dish and refrigerate for at least 4 hours (or overnight) to allow the layers to set.
