1 cup (2 sticks) unsalted butter
1 cup granulated sugar
1/2 cup light brown sugar
1/2 cup heavy cream
1 teaspoon vanilla extract
1/2 teaspoon sea salt
1 cup pretzel rods
1 cup chopped nuts (optional)
1 cup chocolate chips (optional)
Instructions
Line a baking sheet with parchment paper or a silicone mat.
In a medium saucepan, combine the butter, granulated sugar, and light brown sugar. Place the saucepan over medium heat and cook, stirring occasionally, until the sugar has dissolved.
Bring the mixture to a boil, then reduce the heat to medium-low and simmer for about 10-12 minutes, or until the toffee reaches 290°F on a candy thermometer.
Remove the saucepan from the heat and stir in the heavy cream, vanilla extract, and sea salt.
Let the toffee cool slightly, until it reaches 275°F.
Dip each pretzel rod into the toffee, coating it completely. Tap off any excess toffee by gently tapping the pretzel against the side of the saucepan.
Place the coated pretzels on the prepared baking sheet. If desired, sprinkle with chopped nuts or chocolate chips before the toffee hardens.
Let the toffee cool and harden completely. This can take about 30-40 minutes, depending on the temperature and humidity in your area.
Once the toffee is hard, break the pretzels into pieces and serve.
