A delightful way to elevate the humble radish by roasting it with butter, transforming it into a sweet, tender, and flavorful side dish.
Ingredients
Scale:
- 1 pound of fresh radishes, preferably small to medium-sized
- 4 tablespoons unsalted butter, melted
- 1 teaspoon sea salt, or to taste
- ½ teaspoon freshly ground black pepper
- 2 tablespoons of chopped fresh parsley or chives for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the radishes thoroughly under cold water, trim the tops and tails, and cut larger radishes in half.
- In a large mixing bowl, combine the melted butter, sea salt, and black pepper. Toss the radishes gently until coated.
- Spread the radishes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, stirring halfway through. They should be tender and slightly caramelized.
- Remove from the oven, transfer to a serving dish, and sprinkle with fresh herbs if desired. Serve immediately.
