  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, about 5-7 minutes. Break it apart with a spatula as it cooks. If using vegetarian sausage, follow package instructions for cooking.
  3. Add the diced bell peppers and onions to the skillet with the sausage. Cook for another 3-4 minutes until the vegetables are softened. Stir in the chopped spinach and cook for an additional minute until wilted. Remove from heat.
  4. In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  5. Add the cooked sausage and vegetable mixture into the bowl with the egg mixture. Mix well, then fold in the shredded cheese. If using hash browns, add them here as well.
  6. Grease a 9x13 inch baking dish and pour the breakfast casserole mixture into it, spreading evenly.
  7. Place the dish in the preheated oven and bake for 30-35 minutes, or until the casserole is set in the center and golden brown on top. You can check for doneness by inserting a knife into the center; it should come out clean.
  8. Let the casserole cool for about 5-10 minutes before slicing. Garnish with chopped green onions if desired and serve warm.
