Blueberry Cloud Jello Salad

  1. In a mixing bowl, dissolve the blueberry-flavored gelatin in 1 cup of boiling water. Stir well until completely dissolved, then add 1 cup of cold water and set aside to cool slightly.
  2. In a separate large bowl, combine the softened cream cheese and powdered sugar. Using an electric mixer, beat on medium speed until smooth and creamy.
  3. Gently fold the thawed Cool Whip into the cream cheese mixture using a spatula until just combined.
  4. Gently fold the fresh blueberries into the cream cheese and Cool Whip mixture until evenly distributed.
  5. Once the gelatin mixture has cooled, pour it into the cream cheese and blueberry mixture and stir gently until well combined.
  6. Transfer the mixture into a serving dish or individual cups, cover with plastic wrap, and refrigerate for at least 4 hours, or until fully set.
  7. Once set, remove from the refrigerator and garnish with additional blueberries or Cool Whip before serving.
