Apple fritters are a delightful treat that evokes a sense of nostalgia with each bite. These golden-brown, fluffy apple fritters offer a delightful combination of crispy exteriors and tender, apple-filled interiors, with the subtle warmth of cinnamon and the option to add a sweet glaze or caramel sauce.
Ingredients
Scale:
2 cups all-purpose flour
1/3 cup granulated sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 large eggs
1 cup whole milk
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
2 large apples, peeled, cored, and diced
2 tablespoons lemon juice
1 tablespoon granulated sugar
1 cup powdered sugar (optional glaze)
2-3 tablespoons milk (optional glaze)
1/2 teaspoon vanilla extract (optional glaze)
Instructions
Prepare the Apple Mixture: In a medium bowl, toss the diced apples with lemon juice and sugar. Set aside while you prepare the batter.
Make the Batter: In a large bowl, mix together the flour, sugar, baking powder, cinnamon, and salt. In another bowl, whisk the eggs, milk, melted butter, and vanilla until well combined. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Avoid overmixing to ensure fluffy apple fritters.
Incorporate the Apples: Gently fold the apple mixture into the batter, ensuring the pieces are evenly distributed.
Deep-Fry the Fritters: Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C). Carefully drop spoonfuls of batter into the hot oil, frying a few at a time to avoid crowding. Cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on a paper towel-lined plate.
Prepare the Glaze: If using, whisk together the powdered sugar, milk, and vanilla in a bowl until smooth. Drizzle over the warm fritters.
