2 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced
Vegetable oil (for frying, about 4 cups)
1 cup powdered sugar
2 tablespoons milk
½ teaspoon vanilla extract
Instructions
Start by peeling, coring, and dicing the apples into small pieces, about ½ inch in size. Set them aside.
In a large mixing bowl, combine the flour, baking powder, cinnamon, salt, and sugar. Whisk them together until well blended.
In another bowl, whisk together the eggs, milk, and vanilla extract until smooth.
Gradually pour the wet ingredients into the dry ingredient mixture, stirring gently until just combined.
Fold the diced apples into the batter until they are evenly distributed.
In a large, deep skillet or Dutch oven, pour in vegetable oil to a depth of about 2 inches. Heat the oil over medium-high heat until it reaches 350°F (175°C).
Using a spoon or an ice cream scoop, carefully drop spoonfuls of batter into the hot oil. Fry the fritters for about 2-3 minutes on each side, or until they are golden brown and p■ up.
While the fritters cool slightly, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth.
Once the fritters are slightly cooled but still warm, drizzle the glaze over them or dip the fritters into the glaze for an even coating.
