  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add the ground beef. Cook until browned and fully cooked, about 6-8 minutes. Drain excess fat.
  3. Stir in the black beans and half of the enchilada sauce with the cooked beef. Heat through for an additional 2-3 minutes.
  4. In a 9x13 inch baking dish, spread a thin layer of the remaining enchilada sauce on the bottom. Place 4-5 corn tortillas over the sauce, slightly overlapping them.
  5. Spoon half of the beef and bean mixture onto the tortillas, followed by a sprinkle of cheddar cheese (about 1 cup).
  6. Add another layer of tortillas, followed by the remaining beef mixture, and top with the last layer of tortillas. Pour the remaining enchilada sauce over the top and finish with the remaining cheese.
  7. Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden brown.
  8. Allow to cool for a few minutes before slicing. Serve hot.
