2 (8-ounce) packages cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup cherry pie filling (or fresh cherries, pitted and halved)
Instructions
In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated, ensuring there are no dry spots.
Press the mixture firmly into the bottom of a greased 9x9-inch baking dish. Place the dish in the refrigerator to set while you prepare the filling.
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add in the powdered sugar and vanilla extract, mixing until well combined and fluffy.
Remove the crust from the refrigerator and spread the cheesecake filling evenly over the crust.
